Crab Apples

Plant · Common

Very sour raw, crab apples are cooked into jellies, being rich in pectin, and the sweeter kinds into compotes. Pressed like unripe grapes, they gave verjuice, the sour juice used in sauces and as a condiment all over Western Europe from the Middle Ages to the Renaissance.
