Sloes

Plant · Common

Too astringent to eat until the first frosts soften them, sloes then go into jam, pies and preserves. In Britain they are steeped with sugar in gin to make sloe gin, in Navarre they give pacharán, and fermented they give wine and eau-de-vie. The juice dyes linen a reddish colour that washes out to a lasting pale blue.
