Sorrel Leaves

Plant · Common

The sour, lemony leaves go into soups, sauces and salads; salmon in sorrel sauce, created by the Troisgros brothers in 1962, is a classic of French cooking. Rich in oxalic acid, they are eaten in moderation: in large amounts they upset the stomach and cause kidney stones.
