Prairie Turnip Root

Plant · Common

Plains women dug it from May to July, when the flowers show where it is, with fire-hardened digging sticks. It was eaten raw or boiled, or sliced, braided and dried, or pounded into flour, and stored for winter in buffalo-skin bags. More nourishing than most roots: about 7 percent protein and over half carbohydrate.
