Chios Mastic

From July to September the bark is nicked and the resin drips onto prepared ground, where it hardens into tears: 150 to 180 g per tree a year, above all on Chios. It is chewed as gum, flavours breads and liqueurs, makes a fine varnish and is a remedy for the stomach.
